Tough question.... I'd take a pick between:
- Muley hunting
- salmon fishing
- pheasant hunting
- camping

Saskie, the Northern Pike fishing is slow in NS. 
If you want a big fight, try the striped Bass fishing up in Annapolis Valley areas. Hook on to a 30+ lb (60+ lbs possible) striper and hold on.

I would spend my days, busting through the bushes and sage of Colorado in search of the Monster of all Monster Bucks...
Once I've shot my Buck, I would spend the rest of my time eating a bottomless pot of venison stroganoff!!

Favourite outdoor activity
Had to contemplate this one for a while... I like most any activity that involves the outdoors, but my favorite has to be simply bike riding in the country or hiking in the mountains. Its something I enjoy on a daily basis, definitely good for the soul.
