Hey, anybody out there got some recipes for Antelope? My husband, teenage boys, and I just got back from out annual trek to WY to hunt antelope, however, I cooked up some of the meat for supper....UGH! It's gamey this year. Ususally , if we go before the rut the meat is good, but I understand our hunting area has been very dry this year and the meat tastes it!! Anyone got ideas of recipes PLEASE e-mail me before I jerky or sausage it all.

Try soaking roasts and steaks in buttermilk for 8-24 hours. After the buttermilk soak (in the fridge), rinse off and pat dry with paper towels. Throw away the buttermilk. Prepare like any other game using your favorite recipes.

The buttermilk not only draws out the gamey flavor but also tenderizes the meat.

The buttermilk soak is also great for any game that is a bit strong & gamey, from grouse & sage chickens to deer.

Be sure and add some salt to the buttermilk soak! :yes: Oh yeah, my mom used to do this too. Puree a large green bell-pepper and add it to the buttermilk and salt, and use some bell-pepper in the cooking recipe.
