I was told that Bighorn Sheep are the best eating of the big game. I took a ram on August 31 (summer) so we had to be vigilant with care for the meat - I started skinning the animal and getting meat off the frame to cool even before pictures.
Reward - so far -great on the meat taste.
Taste ... I think my camos taste more like mutton than the meat (after wrestling with the animal on the hill). The meat has only a mild sheep taste.
Recipes ... no need for anything special. Cook like beef or lamb?
The key to good game meat is field handling, not how it is cooked.

| hmmmm ... now I'm told that as rams near the rut the meat is horrible. Dunno what to say. If it's that bad, cooking won't matter either. Take your ram early!!! |
