They make vests fitted to your dog, you simply measure the Ribs, waist and the distance between the front legs, and then select the "level of protection, you desire.
They use institutional Kevlar, not ballistic Kevlar, because ballistic kevlar doesn't protect against knife like cuts that Hogs tend to give dogs...but institutional Kevlar, which is what prison guards then to use, is made to stop knive stabs and pokes.
No vest is CUT PROOF, but these come pretty darn close, without losing mobility.
