what should i do with the meat? what part is good for what?

i shot a my first bear on tueday and i dont know what to do with meat. i've heard pepperoni and summer sausage are good. i have it cut in half right now sittin in a freezer. i dont know what to tell the butcher when i take it to him. thanks

We butcher our own and usually make lots of roasts, burger and sausage.

If you are taking yours in you might want to have some smoked hams done up, some roasts and then sausage.

I butcher bears and most hunters want steak, roasts, stew meat and sausage meat. Personally, I love bear steak, especially from the backstrap/loin. If I am successful next week, much of the meat will be made into summer sausage with pepperjack cheese! Bear stew is also very tasty! For a real treat, take a hind quarter to some one who will smoke it like a smoked ham.

Pepperettes, sausage, roasts, tenderloins and minute steaks. Is what I usually get. Thumbs up
