The taste of bear meat

I've heard that bear meat isn't all that tasty. Some have even told me that it's a bit hard to eat. Bear hunting would be yet another reason to get outdoors and go hunting before deer and elk season, but I cannot justify killing a bear just for it's rug. So what's the real story on bear meat? Is it good or just tolerable?

I've had some delicious berry fed Bear meat and quite tender.
The best Chilly I've ever eaten was made with bear meat. Yummy

Is bear a meat you would want to eat as a steak? Or is it best in chili, burritos etc.?

I don't recall ever eating it as a steak. I've always had it as the meat in a dish. Then again, I like cassaroles, stews, rice, potato and pasta dishes, meals as such. Matter not what meat is in it. As long as it's good.

A lot of my clients love bear meat and others dont eat it ,I have cooked backstraps for a group of guys as you would steak and they all liked it and have others that said they cooked hole quarters at a time with good results.The big thing is cook it very good as bear carries thr same triganosis parasite as pork.As far as dumping bears and leaving them that is a waste of a resource as well as unethical.

Some folks like it, personaly I want nothing to do with it.
You could find someone who would take the carcass before you go on a hunt and you could dump it on them instead of looking for someone after the fact.

The taste of bear meat

I have eaten bear meat as steaks, roasts, ground into hamberger and smoked a hind quater like a ham. I think the tastest was the ham. Served it at a picnic and everyone raved about how good it tasted. Any bear that feeds on natural foods should be good to eat. I work with a bear outfitter and should any successful hunter not want the meat, I will eagerly take it.

All my guys take the meat along with the cape. The only bear I've heard tasted a bit strong were old boars during breeding--same story as deer or moose during the rut. And same here. If I didn't plan to use an animal I'd never shoot it. Thats not hunting.

I've always eaten my bears-- not as good as Elk/moose etc but ok-- Backstraps are great on grille fresh and so is the heart--then I make pot roast out of front quaters-- cure and smoke hams- make bacon from flanks and grind the rest for sausage.

I've had some pretty foul bear meat but then again I've had some awful good also. I thing where people get in troubke with it is #1 you have to get all the fat off you can, that stuff is said to make great pie crust, I don't know, but it's best on boot's as a water repellent. #2 The rib's leave much t be desired, at least the one's I've had. I've only shot two myself and I took the to a processor in Kalispell, year's ago, and had the ham's and back strap sugar cured. Tasted just like canadian bacon to me, great!
