Sorry I can't help with the sheep hunting information but I never understood why people hunted them myself.
It always appeared to be a situation where there was a lot of work one had to go to in order to reach them, and then if you were successful in your quest, there would be a lot of work one would have to go to.
If you want to properly preserve velvet antlers, you will have to inject & brush them with formaldehyde or some of the new less toxic chemicals (4 in 1 solution works great as does Knobloch's antler in velvet tan) as its easier to use however, both will work.
