Here in CT Zones 1-10 end Dec 31 for landowner and archery, Zones 11 & 12 has an extended season through all of January. I think regular rifle/shotgun season ended Dec. 5th or so. They are just trying to get rid of them down by the shore as there are just too many.
Big game is over in Idaho ... but there are depredation hunts after the seasons close. I am told my name is at / near the top of the list. Good, since I still have an elk tag burning a hole in my pocket.
Off season ... I try and stay on my bike or hike as much as possible. In 2005 I hunted elk in a certain spot near here. As indicated above I never filled the elk tag - but I sure learned a lot about the whitetail deer in the area. My daughter and I took 3 deer out of a relatively small (in my mind) spot - (and I would like to think) out from under everyone else hunting the area.
If you're lucky enough to be on private land and can leave your stand up during the off season you can tie an old piece of cloth or something of the sort to your stand. I like to use an old camo bandana that I have. That way the deer get used to the movement and eventually don't bother even looking up when there is slight movement. This may just give you the time to draw your bow or raise your gun without being detected.
