They are scavengers. They are carriers of diseases, bugs, and other crap. Would you eat a rat? Think about what they eat and maybe you'll change your mind, but I say go for it if you want but I wouldn't do it. I've tried most big game animals: cougar, bear, and even beaver. Predators do taste a little different.
