I recently bought the Gatco Edgemate Knife Sharpening System, and I have tried it out on several knifes. So far, I think I like the results. As an aside, I did not realize how many knives I have until I started trying to sharpen so many of them at one time. Anyway, it feels like I can get a nice edge on my knives fairly consistently and quickly. I have had some difficulty keeping the blade locked in the blade holder depending on the particular knife, but it is a small inconvenience. The real test will come this fall if I fill at least one of my big game tags, and then I can field test how well I actually sharpened my knives.
What do you use to sharpen your knives? Have you tried any knife sharpeners that you really did or did not like?
