Game Recipes

Do you have a favorite game recipe or do you just use regular recipes and substitute game meat?  If you have a favorite game recipe then go ahead and post it.

I don't use recipes, game or non-game.  My mom taught me to cook and being the great Italian cook that she is, she never used recipes.  Of course, this meant it was always a little different but always tasty.

Easiest & Best Steak

Here's a trio of spices to put on steaks that always works.  Liberally season both sides of the steak (Loin steak from whatever game you have. Use it on a good beef rib eye if that's all you have) with black pepper, garlic salt and onion powder and don't be afraid of the garlic salt.  Let sit at room temp for 20 - 30 minutes then add a couple tbsp of bacon grease to a hot cast iron skillet & sear both sides, 2 - 4 minutes per side depending on thickness - my loin steaks are usually about 1.5 to 2 inches thick. If you want the best flavor and texture DON'T cook past medium rare (use a thermometer and pull off the heat at 130F). Tranfer to a plate & cover loosely with foil.  Add butter to skillet to bring amount of fat & juices to about 3 or 4 tbsp & add an equal amount of flour.  Cook the flour constantly stirring for a couple of minutes (don't burn it) then add milk ( enough to make a gravy - a cup or so), a pinch of cayenne pepper, a little thyme, adjust for salt & pepper.  Pour over the steaks & the fried potatoes you already made.

Man Hal that sounds good

Man Hal that sounds good especially the gravy part.  I tend to season my game with salt and pepper and marinate in olive over night.  I might add a little garlic powder, but I keep it pretty simple.  i will, however, try your recipe.

The gravy recipe sounds real good over fried potatoes.  I know what I'll be having the next time I prepare some game.  Thanks.

Actually, one my wife is

Actually, one my wife is making tonight, but she won't make it with the venison.  It's a crock pot lasagna.  didn't think I'd like the idea at first, but with some excellent spicy italian sausage and regular venison, it is delicious.
