I have never had it, but I've have had other game meat sausage and it can be quite good. I am looking forward to getting a deer this year because I want the meat processor to make some of it into jalapeno and cheese summer sausage. This is some really good stuff.
When in Canada hunting the mountain goat, the outfitter's wife would prepare goat summer sausage and cheese sandwiches on homemade bread. It was fantastic stuff. She was a great cook.
I have never had it as sausage, but I have had caribou meat and it is one of my favorites. I cook it like I do most venison, just butter and onions, salt and pepper. Great mild taste. I can imagine that the sausage would be pretty good.
Most of the Caribou sausage here is spiced heavy ,While it is very good, I like caribou so covering the flavor so completly isn't needed for me. I like to make sausage thats a little more mild so you can actually taste what your eating.

Hinge cuts for bedding should be done around chest high so that there is room for a deer to bed underneath.
