BIG BUCK 8 POINTER / HOW LONG TO HANG A DEER

I'M LOOKING TO CURE A DEER FOR A WHILE IN THE GARAGE
I KNOW YOU CAN HANG THEM FOR 7 DAYS BUT IS THERE
A BETTER TIME AMOUNT AND DOES IT STINK AT ALL?

DOES SKIN ON OR OFF MAKE A DIFFERENCE/TASTE ?

I personally dont let them hang long, just enough to bleed out some and be good and cold,never froze anymore.I used to hange m for a week or more and noticed since i stopped that the meat is much less gamey, i often have ppl comment on how much less gamey mine is then thiers, taken from same area.

Deer meat doesnt have the enzyme like beef does to "age" it so that reasoning doesnt fly to leave it hang ( used to think same way when i was younger)

Basically over night maybe 2 nights and Im after it to start processing, Like i said i just want the blood drained from veins and its a go. Try it and compare but youll be suprised if your used to gamey venision thats hung along while.

We gut and skin all our wild game immediately. I feel leaving the hide on does affect the flavor, so we skin immediately if possible, definitely within a couple hours. If its cold we allow it to hang for a few days, up to a week. If its too warm we butcher within a day or two.

To reduce the gamey flavor of the meat, we also like to bone out our deer or elk and remove as much of the fat as possible. I find both the bones and fat give the strong flavor that so many people don't like.

i agree taking out as much sinew and fat helps take out alot of the game taste.

can you cure and hang already frozen venison
like 3-4lb roast size? if you hang it for 3-4days
will it tenderize?

If it's too warm or too cold I don't leave my deer to hang. Hanging in hot weather is an obvious problem. If it is too cold and the deer freezes, it is very difficult to skin and butcher. In these conditions, I skin and quarter the deer and place it in the refridgerator for a few days before deboning.

If you skin it and hang for too long afterward, it will cause the outer portion of the meat to dry out. With that being said, no more than a few days would be recommended.

Always be sure to debone the deer and NEVER saw through the bone. Sawing through the bone will cause the meat to have a bitter taste.

With a frozen roast, I either place it in cold water until thawed, or leave it in the refridgerator until thawed. I wouldn't hang it or age it at all once it's thawed.

we stay in deer camp for 10 days ata time so we debone all the meat or at least quarter deer out , put in nonscented garbage bag ,pack meat and ice in cooler, cover with tarps to keep out of sun. meat is always in good shape when we get home.
