bear recipes ?

I've had black bear a few times although I have yet to bag my own bear. 

I have not really cared for any of the ways I have had it prepared, so I'm just wondering if anyone has a sure fire bear recipe or if I should stick to my plan of donating the majority of the meat to the annual game dinner at my local club?

I don't know if I could grind

I don't know if I could grind a whole bear, but my favorite has always been bear burgers.  Unlike regular venison, which is very lean and can dry out fast, I find that bear has just the right amount of grease/fat to make a great burger.

I have never had it at all

I have never had it at all yet but my intention when I finally get one is to grind the whole thing for sausage.

Sausage has pretty much fixed anything I was not sure how to use any other way.

I love bear !!! ;)

This is how I have my bears done ! Thumbs up

1. I have the backstraps cut into steaks. When I prepare them I marinate them in Zesty Italian dressing and cook them on the grill. Do Not over cook as it will become chewy.

2. And this is a must. I have both back hams deboned and then cured and smoked. There is absolutely nothing better. I just thaw one out and cut it up and eat it.

3. I have part of the rest made into brauts (what ever flavor you like). Boil them in a flat beer and them throw them on the grill for some added flavor.

4. And last but not least I have the rest made into spicy breakfast sausage. Again nothing better !

I still have one ham left to break out off of a bear from 2010. It wont last long.

Never had any luck cooking Bear.

Its not our favorite, but we've had it cooked well by others and ate it for the sake of eating it.  Everytime we try to cook it or prepare it ourselves its just terrible.  If we shoot any this spring we are giving it all away.

Thanks for the ideas guys.  I like the braut and sausage plan. 

God willing that I bag a bear one of these days I'll try some sausage recipes.

If they fail, I can always give teh rest away after that!

Was looking for something similar myself.

I've only had bear a couple

I've only had bear a couple times and it was marinated in bbq sause then cooked on a tragger wood pellet stove. It was some of the best stuff i've tasted. I would like to shot a bear and make some sausage out of it. all this talk of bear meat is making me hungry, but then again i didnt have lunch today. To be honest with you any hing made on a tragger wood pellet gril is good I dont think you can mess it up, I think even a rock would turn out tender and moist.

I've had bear steaks on the

I've had bear steaks on the grill, bear jerky, bear sausage (never tried hams) given to me by friends.  The taste is not something I can handle so I will never shoot a bear as I won't shoot anything I can't eat but good luck to you and I hope you like it.  I don't know of anyone that's shot one that didn't give most of the meat away.   Sick
